Mother-daughter duo to expand Chicken Salad Chick into West Texas

Chicken Salad Chick, the nation’s only fast casual chicken salad restaurant concept, signed a three-unit development agreement that will bring new restaurants to MidlandOdessa, and San Angelo over the next three years.

The first location is slated to open in Midland in Fall 2024, while the second two locations are slated to open in 2025 and 2026, respectively.

Mother-daughter duo Liz Sevcik and Alexis Thompson are behind the development agreement. Thompson, a teacher, and Sevcik, a registered nurse and teacher, learned of Chicken Salad Chick when Sevcik visited her daughter, Ellie Sevcik, in Oxford, Mississippi. Sevcik fell in love after trying the brand. After raving about it for years, she applied to become a franchisee. She asked if Thompson wanted to become a partner, and now the duo is on their way to opening their first location in Midland next year.

“It is a dream come true to have the opportunity to bring something so beloved and delicious to our community,” said Thompson.

Stacy and Kevin Brown founded Chicken Salad Chick in Auburn, Alabama, in 2008. The brand now has 240 restaurants in 18 states, including in Fort WorthDallasHoustonTylerAmarilloSan Antonio, and Waco. The three-unit agreement with Sevcik and Thompson marks the brand’s expansion in West Texas.
